Looking for a simple meal high in fiber!? This one has lots of veggies, chicken sausage, and cheese (because who doesn’t love cheese) and the best part is - you only need one large baking sheet to make it!
Bonus: It’s also totally adaptable to suit your family’s preferences and diet restrictions if needed!
I like my veggie and brie fondue heavy on the veggies with some spice but feel free to adjust any of the ingredients below (you can also cook at a higher temperature for less time!)
Veggie & Brie Fondue
Makes 2-4 Servings | 60 minutes
Ingredients
1/2 red onion, sliced
10-15 Brussels sprouts, halved
1 red bell pepper, largely chopped
1 orange bell pepper, largely chopped
10-15 asparagus stalks, largely chopped
8-10 mini potatoes, quartered (I used red, yellow, and purple!)
2 jalapeño chicken sausages, halved and sliced
Avocado oil
Pumpkin seeds
Spices (black pepper, cayenne, red pepper flakes, smoked paprika)
1 wedge triple cream Brie
Directions
1. Preheat oven to 350. Line baking sheet with aluminum foil (parchment paper also works).
2. Place chopped vegetables and chicken sausage on a baking sheet, drizzle with avocado oil and sprinkle pumpkin seeds and seasoning to preference.
3. Roast for 45 minutes. Remove from the oven and place brie wedge in the center.
4. Place back in the oven for ~15 minutes until cheese melts. Remove from oven and enjoy!
